Ingredients

For the Coffee Base:

  • 1 cup (240 ml) brewed coffee, cooled (use your favorite blend)
  • 1/2 cup (120 ml) milk (whole, 2%, or plant-based like almond or oat)
  • 1-2 tablespoons (15-30 ml) cherry syrup (store-bought or homemade, see below)
  • Ice cubes

For the Cheesecake Cream:

  • 1/4 cup (60 g) cream cheese, softened
  • 2 tablespoons (30 ml) heavy cream
  • 1 tablespoon (12 g) granulated sugar
  • 1/2 teaspoon vanilla extract

For the Cherry Syrup (if making homemade):

  • 1 cup (150 g) pitted fresh or frozen cherries
  • 1/4 cup (50 g) granulated sugar
  • 1/4 cup (60 ml) water
  • 1 teaspoon lemon juice

For Garnish (optional):

  • Whipped cream
  • Crushed graham crackers
  • Fresh cherries or a drizzle of cherry syrup

Equipment

  • Blender or whisk
  • Saucepan (if making homemade cherry syrup)
  • Measuring cups and spoons
  • Glasses for serving

Instructions

Step 1: Prepare the Cherry Syrup (if making homemade)

  1. In a small saucepan, combine pitted cherries, sugar, water, and lemon juice.
  2. Bring to a simmer over medium heat, stirring occasionally, for 8-10 minutes until the cherries soften and the mixture thickens slightly.
  3. Strain the mixture through a fine mesh sieve, pressing the cherries to extract the liquid. Discard the solids or save for another use (e.g., dessert topping).
  4. Let the syrup cool to room temperature. Store in an airtight container in the refrigerator if not using immediately.

Step 2: Make the Cheesecake Cream

  1. In a small bowl or blender, combine softened cream cheese, heavy cream, sugar, and vanilla extract.
  2. Whisk or blend until smooth and creamy, with no lumps. Set aside.

Step 3: Assemble the Iced Coffee

  1. Fill a tall glass with ice cubes.
  2. Pour the cooled brewed coffee over the ice, filling the glass about 3/4 full.
  3. Add 1-2 tablespoons of cherry syrup, depending on desired sweetness, and stir gently.
  4. Pour in the milk and stir until combined.
  5. Spoon or pipe the cheesecake cream over the top of the coffee mixture. It will partially sink, creating a creamy layer.

Step 4: Garnish and Serve

  1. Top with a dollop of whipped cream, if desired.
  2. Sprinkle crushed graham crackers over the top for a cheesecake crust effect.
  3. Add a fresh cherry or a drizzle of cherry syrup for extra flair.
  4. Serve immediately with a straw and enjoy!

Tips

  • Adjust the cherry syrup to taste for a stronger or milder cherry flavor.
  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • Store leftover cherry syrup in the refrigerator for up to 1 week.
  • For a vegan version, use plant-based milk, vegan cream cheese, and coconut cream instead of heavy cream.
