Ingredients

  • For the Cold Brew Coffee:
    • 1 cup coarsely ground coffee beans
    • 4 cups cold filtered water
  • For the Date-Almond Milk:
    • 1 cup raw almonds, soaked overnight (8-12 hours)
    • 4 cups filtered water
    • 4-6 Medjool dates, pitted
    • 1 tsp vanilla extract
    • Pinch of sea salt
  • For the Iced Coffee:
    • Ice cubes
    • 1-2 tsp maple syrup or honey (optional, for extra sweetness)
    • Ground cinnamon or cocoa powder (optional, for garnish)

Equipment

  • Large jar or pitcher (for cold brew)
  • Cheesecloth or nut milk bag (for almond milk)
  • Blender
  • Fine mesh strainer
  • Glass or mug for serving

Instructions

Step 1: Prepare the Cold Brew Coffee

  1. In a large jar or pitcher, combine the coarsely ground coffee and 4 cups of cold filtered water.
  2. Stir gently to ensure all grounds are wet.
  3. Cover and let steep in the refrigerator for 12-24 hours.
  4. After steeping, strain the coffee through a fine mesh strainer or cheesecloth into a clean pitcher. Discard the grounds.
  5. Store the cold brew concentrate in the refrigerator until ready to use.

Step 2: Make the Date-Almond Milk

  1. Drain and rinse the soaked almonds.
  2. In a blender, combine the almonds, 4 cups of filtered water, pitted dates, vanilla extract, and a pinch of sea salt.
  3. Blend on high for 1-2 minutes until smooth and creamy.
  4. Strain the mixture through a nut milk bag or cheesecloth into a bowl or pitcher, squeezing to extract as much liquid as possible.
  5. Discard the almond pulp or save it for baking (e.g., in muffins or energy bites).
  6. Store the date-almond milk in a sealed container in the refrigerator for up to 3-4 days.

Step 3: Assemble the Iced Coffee

  1. Fill a glass with ice cubes.
  2. Pour 1/2 cup of cold brew coffee concentrate over the ice.
  3. Add 1/2 cup of date-almond milk (adjust to taste for creaminess).
  4. Stir gently to combine. Taste and add maple syrup or honey if additional sweetness is desired.
  5. Optionally, sprinkle a pinch of ground cinnamon or cocoa powder on top for garnish.

Serving Suggestions

  • Serve immediately for the best flavor and chill.
  • Pair with a light snack like almond biscotti or fresh fruit.
  • For a stronger coffee flavor, use a 1:1 ratio of cold brew to almond milk.

Notes

  • The cold brew concentrate can be diluted with water (1:1 ratio) if you prefer a milder coffee flavor.
  • Adjust the number of dates in the almond milk for desired sweetness.
  • Store leftover cold brew and date-almond milk separately in the refrigerator. Cold brew lasts up to 1 week, while the almond milk is best used within 3-4 days.
