Equipment
- Large jar or pitcher (for cold brew)
- Cheesecloth or nut milk bag (for almond milk)
- Blender
- Fine mesh strainer
- Glass or mug for serving
Instructions
Step 1: Prepare the Cold Brew Coffee
- In a large jar or pitcher, combine the coarsely ground coffee and 4 cups of cold filtered water.
- Stir gently to ensure all grounds are wet.
- Cover and let steep in the refrigerator for 12-24 hours.
- After steeping, strain the coffee through a fine mesh strainer or cheesecloth into a clean pitcher. Discard the grounds.
- Store the cold brew concentrate in the refrigerator until ready to use.
Step 2: Make the Date-Almond Milk
- Drain and rinse the soaked almonds.
- In a blender, combine the almonds, 4 cups of filtered water, pitted dates, vanilla extract, and a pinch of sea salt.
- Blend on high for 1-2 minutes until smooth and creamy.
- Strain the mixture through a nut milk bag or cheesecloth into a bowl or pitcher, squeezing to extract as much liquid as possible.
- Discard the almond pulp or save it for baking (e.g., in muffins or energy bites).
- Store the date-almond milk in a sealed container in the refrigerator for up to 3-4 days.
Step 3: Assemble the Iced Coffee
- Fill a glass with ice cubes.
- Pour 1/2 cup of cold brew coffee concentrate over the ice.
- Add 1/2 cup of date-almond milk (adjust to taste for creaminess).
- Stir gently to combine. Taste and add maple syrup or honey if additional sweetness is desired.
- Optionally, sprinkle a pinch of ground cinnamon or cocoa powder on top for garnish.
Serving Suggestions
- Serve immediately for the best flavor and chill.
- Pair with a light snack like almond biscotti or fresh fruit.
- For a stronger coffee flavor, use a 1:1 ratio of cold brew to almond milk.
Notes
- The cold brew concentrate can be diluted with water (1:1 ratio) if you prefer a milder coffee flavor.
- Adjust the number of dates in the almond milk for desired sweetness.
- Store leftover cold brew and date-almond milk separately in the refrigerator. Cold brew lasts up to 1 week, while the almond milk is best used within 3-4 days.
