Ingredients

  • 1 cup fresh sweet corn kernels (or canned corn, drained)
  • 1 cup whole milk (or plant-based milk like oat or almond for a dairy-free option)
  • 1/2 cup water
  • 1 tablespoon granulated sugar (adjust to taste)
  • 1 teaspoon pure vanilla extract
  • 1 shot (1 oz) espresso (or 1/4 cup strong brewed coffee)
  • Whipped cream (optional, for topping)
  • Ground cinnamon or nutmeg (optional, for garnish)

Equipment

  • Blender
  • Fine mesh strainer or cheesecloth
  • Small saucepan
  • Espresso machine or coffee maker
  • Whisk or milk frother
  • Serving mug

Instructions

  1. Prepare the Sweet Corn Milk:
    • In a blender, combine the sweet corn kernels, milk, and water. Blend on high until smooth, about 1-2 minutes.
    • Strain the mixture through a fine mesh strainer or cheesecloth into a small saucepan, pressing to extract as much liquid as possible. Discard the solids.
    • Add sugar to the strained corn milk and heat over medium-low, stirring occasionally, until the sugar dissolves and the mixture is warm (do not boil). Remove from heat.
  2. Add Vanilla:
    • Stir the vanilla extract into the warm corn milk mixture. Taste and adjust sweetness if needed by adding more sugar.
  3. Brew the Espresso:
    • Prepare a shot of espresso using an espresso machine or brew a strong quarter-cup of coffee.
  4. Froth the Corn Milk:
    • Use a whisk, milk frother, or steam wand to froth the warm corn milk mixture until it’s foamy. If you don’t have a frother, you can vigorously whisk it in the saucepan over low heat.
  5. Assemble the Latte:
    • Pour the espresso shot into a mug.
    • Slowly pour the frothed corn milk over the espresso, holding back the foam with a spoon, then spoon the foam on top.
  6. Garnish and Serve:
    • Top with whipped cream if desired, and sprinkle a pinch of cinnamon or nutmeg for extra flavor.
    • Serve immediately while hot.

Tips

  • For a colder version, chill the corn milk mixture after straining and serve over ice with cold brew coffee instead of espresso.
  • Adjust the corn-to-milk ratio for a stronger or milder corn flavor.
  • Store any leftover corn milk in an airtight container in the refrigerator for up to 2 days; reheat gently before using.
