Ingredients
- 1 cup fresh sweet corn kernels (or canned corn, drained)
- 1 cup whole milk (or plant-based milk like oat or almond for a dairy-free option)
- 1/2 cup water
- 1 tablespoon granulated sugar (adjust to taste)
- 1 teaspoon pure vanilla extract
- 1 shot (1 oz) espresso (or 1/4 cup strong brewed coffee)
- Whipped cream (optional, for topping)
- Ground cinnamon or nutmeg (optional, for garnish)
Equipment
- Blender
- Fine mesh strainer or cheesecloth
- Small saucepan
- Espresso machine or coffee maker
- Whisk or milk frother
- Serving mug
Instructions
- Prepare the Sweet Corn Milk:
- In a blender, combine the sweet corn kernels, milk, and water. Blend on high until smooth, about 1-2 minutes.
- Strain the mixture through a fine mesh strainer or cheesecloth into a small saucepan, pressing to extract as much liquid as possible. Discard the solids.
- Add sugar to the strained corn milk and heat over medium-low, stirring occasionally, until the sugar dissolves and the mixture is warm (do not boil). Remove from heat.
- Add Vanilla:
- Stir the vanilla extract into the warm corn milk mixture. Taste and adjust sweetness if needed by adding more sugar.
- Brew the Espresso:
- Prepare a shot of espresso using an espresso machine or brew a strong quarter-cup of coffee.
- Froth the Corn Milk:
- Use a whisk, milk frother, or steam wand to froth the warm corn milk mixture until it’s foamy. If you don’t have a frother, you can vigorously whisk it in the saucepan over low heat.
- Assemble the Latte:
- Pour the espresso shot into a mug.
- Slowly pour the frothed corn milk over the espresso, holding back the foam with a spoon, then spoon the foam on top.
- Garnish and Serve:
- Top with whipped cream if desired, and sprinkle a pinch of cinnamon or nutmeg for extra flavor.
- Serve immediately while hot.
Tips
- For a colder version, chill the corn milk mixture after straining and serve over ice with cold brew coffee instead of espresso.
- Adjust the corn-to-milk ratio for a stronger or milder corn flavor.
- Store any leftover corn milk in an airtight container in the refrigerator for up to 2 days; reheat gently before using.
