Ingredients

For the Wings:

  • 2 lbs (900g) chicken wings, split into flats and drumettes
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

For the Avocado-Lime Sauce:

  • 1 ripe avocado, pitted and peeled
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1-2 tablespoons water (to adjust consistency)

For Garnish (Optional):

  • Lime wedges
  • Extra chopped cilantro
  • Sliced jalapeños

Equipment

  • Baking sheet
  • Wire rack (optional, for crispier wings)
  • Large mixing bowl
  • Blender or food processor
  • Small bowl for tossing wings

Instructions

  1. Prepare the Wings:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top if using.
    • Pat the chicken wings dry with paper towels to remove excess moisture.
    • In a large mixing bowl, toss the wings with baking powder, kosher salt, garlic powder, black pepper, and smoked paprika until evenly coated.
  2. Bake the Wings:
    • Arrange the wings in a single layer on the baking sheet or wire rack, ensuring they don’t touch each other.
    • Bake for 40-45 minutes, flipping the wings halfway through, until they are golden brown and crispy.
  3. Make the Avocado-Lime Sauce:
    • In a blender or food processor, combine the avocado, lime juice, cilantro, olive oil, minced garlic, cumin, salt, and black pepper.
    • Blend until smooth, adding 1-2 tablespoons of water to reach your desired consistency. Taste and adjust seasoning if needed.
  4. Toss and Serve:
    • Once the wings are baked, transfer them to a clean large bowl.
    • Pour the avocado-lime sauce over the wings and toss gently to coat evenly.
    • Transfer to a serving platter.
  5. Garnish and Enjoy:
    • Garnish with lime wedges, extra chopped cilantro, and sliced jalapeños if desired.
    • Serve immediately while the wings are hot and crispy.

Tips

  • For extra crispiness, refrigerate the coated wings uncovered for 1-2 hours before baking to dry out the skin.
  • The avocado-lime sauce can be made ahead and stored in an airtight container in the fridge for up to 1 day. Stir well before using.
  • Pair with a side of celery sticks or a light salad for a complete meal.
