Instructions

Make the Mojo Mustard:

  1. In a small bowl, whisk together both mustards, minced garlic, orange juice, lime juice, olive oil, cumin, and oregano.
  2. Season with salt, pepper, and red pepper flakes if using.
  3. Let the mixture sit for at least 15 minutes to allow flavors to meld. Can be made up to 2 days ahead and refrigerated.

Prepare the Hot Dogs:

  1. Heat a grill, grill pan, or skillet over medium-high heat.
  2. Cook the hot dogs for 6-8 minutes, turning occasionally, until heated through and lightly charred.
  3. During the last 2 minutes of cooking, add the buns cut-side down to warm and lightly toast.

Caramelize the Onions:

  1. While hot dogs cook, heat olive oil in a skillet over medium heat.
  2. Add sliced onions and cook for 8-10 minutes, stirring occasionally, until golden and caramelized.
  3. Season with salt and pepper.

Assemble:

  1. Place each hot dog in a toasted bun.
  2. Generously spread the mojo mustard over each hot dog.
  3. Top with caramelized onions and fresh cilantro.
  4. Add any optional toppings as desired.
  5. Serve immediately with lime wedges on the side.

Chef’s Tips:

  • For extra flavor, marinate the hot dogs in some of the mojo mustard mixture for 30 minutes before grilling
  • The mojo mustard also works great as a condiment for grilled chicken or pork
  • Try using Cuban bread instead of regular hot dog buns for an authentic touch
  • Serve with black beans and rice on the side for a complete Cuban-inspired meal
