Make the Mojo Mustard:
- In a small bowl, whisk together both mustards, minced garlic, orange juice, lime juice, olive oil, cumin, and oregano.
- Season with salt, pepper, and red pepper flakes if using.
- Let the mixture sit for at least 15 minutes to allow flavors to meld. Can be made up to 2 days ahead and refrigerated.
Prepare the Hot Dogs:
- Heat a grill, grill pan, or skillet over medium-high heat.
- Cook the hot dogs for 6-8 minutes, turning occasionally, until heated through and lightly charred.
- During the last 2 minutes of cooking, add the buns cut-side down to warm and lightly toast.
Caramelize the Onions:
- While hot dogs cook, heat olive oil in a skillet over medium heat.
- Add sliced onions and cook for 8-10 minutes, stirring occasionally, until golden and caramelized.
- Season with salt and pepper.
Assemble:
- Place each hot dog in a toasted bun.
- Generously spread the mojo mustard over each hot dog.
- Top with caramelized onions and fresh cilantro.
- Add any optional toppings as desired.
- Serve immediately with lime wedges on the side.
Chef’s Tips:
- For extra flavor, marinate the hot dogs in some of the mojo mustard mixture for 30 minutes before grilling
- The mojo mustard also works great as a condiment for grilled chicken or pork
- Try using Cuban bread instead of regular hot dog buns for an authentic touch
- Serve with black beans and rice on the side for a complete Cuban-inspired meal
