Ingredients (Serves 2)

For the Shake:

  • 2 cups vanilla ice cream (or chocolate ice cream for extra richness)
  • 1/2 cup whole milk (or plant-based milk for a lighter option)
  • 1/4 cup dark chocolate chips (at least 70% cocoa), melted
  • 2 tablespoons espresso or strong brewed coffee, cooled
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

For the Crunch:

  • 1/4 cup chocolate-covered espresso beans, roughly chopped
  • 1/4 cup toasted almonds or hazelnuts, chopped (optional for extra crunch)

For Garnish (Optional):

  • Whipped cream
  • Dark chocolate shavings
  • Additional chopped chocolate-covered espresso beans
  • Drizzle of chocolate syrup

Equipment

  • Blender
  • Microwave-safe bowl or double boiler (for melting chocolate)
  • Measuring cups and spoons
  • Glasses for serving

Instructions

  1. Prepare the Ingredients
    • If not using pre-made espresso, brew a strong cup of coffee and let it cool to room temperature or chill in the fridge for 10 minutes.
    • Melt the dark chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each, or use a double boiler until smooth. Let it cool slightly.
  2. Blend the Shake
    • In a blender, combine the vanilla ice cream, milk, melted dark chocolate, espresso, cocoa powder, vanilla extract, and sea salt.
    • Blend on medium-high speed until smooth and creamy, about 30-45 seconds. If the shake is too thick, add a splash more milk; if too thin, add a bit more ice cream.
  3. Add the Crunch
    • Add the chopped chocolate-covered espresso beans and toasted nuts (if using) to the blender. Pulse 2-3 times to incorporate the crunch without fully blending it into the shake. Alternatively, stir them in with a spoon for more texture.
  4. Serve
    • Pour the shake into two chilled glasses.
    • Top with whipped cream, a drizzle of chocolate syrup, dark chocolate shavings, and a sprinkle of additional chopped espresso beans, if desired.
  5. Enjoy Immediately
    • Serve with a straw or spoon and savor the rich, crunchy goodness!

Tips

  • Make it Vegan: Use dairy-free ice cream (like coconut or almond-based) and plant-based milk. Ensure the chocolate chips and espresso beans are vegan-friendly.
  • Adjust Sweetness: For a less sweet shake, reduce the chocolate chips to 2 tablespoons or use 85%+ dark chocolate.
  • Caffeine Kick: For a stronger coffee flavor, increase the espresso to 3 tablespoons, but taste as you go to balance the bitterness.
