Ingredients

For the Wings:

  • 2 lbs (900g) chicken wings, split into flats and drumettes
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

For the Espresso Chipotle Glaze:

  • 1/2 cup brewed espresso (or strong coffee)
  • 1/4 cup honey
  • 2 tbsp adobo sauce (from canned chipotle peppers)
  • 1-2 chipotle peppers in adobo, finely chopped (adjust for spice preference)
  • 2 tbsp soy sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp garlic, minced
  • 1 tsp cornstarch mixed with 1 tbsp water (for thickening)
  • 1 tbsp unsalted butter

Optional Garnish:

  • Chopped fresh cilantro
  • Sliced green onions
  • Lime wedges for squeezing

Equipment

  • Large mixing bowl
  • Baking sheet with a wire rack
  • Small saucepan
  • Whisk
  • Tongs

Instructions

Step 1: Prepare the Wings

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with a wire rack and lightly grease the rack with cooking spray.
  2. In a large mixing bowl, toss the chicken wings with olive oil, salt, black pepper, garlic powder, and smoked paprika until evenly coated.
  3. Arrange the wings in a single layer on the wire rack. Bake for 40-45 minutes, flipping halfway through, until the wings are crispy and golden brown.

Step 2: Make the Espresso Chipotle Glaze

  1. In a small saucepan over medium heat, combine the brewed espresso, honey, adobo sauce, chopped chipotle peppers, soy sauce, apple cider vinegar, brown sugar, and minced garlic.
  2. Bring the mixture to a simmer, stirring occasionally, and let it cook for 5-7 minutes to meld the flavors.
  3. Add the cornstarch-water mixture to the saucepan, stirring constantly until the glaze thickens, about 1-2 minutes.
  4. Remove from heat and stir in the butter until fully melted and incorporated. Set the glaze aside.

Step 3: Glaze the Wings

  1. Once the wings are cooked, transfer them to a large clean mixing bowl.
  2. Pour the espresso chipotle glaze over the wings and toss to coat evenly.

Step 4: Serve

  1. Transfer the glazed wings to a serving platter.
  2. Garnish with chopped cilantro, sliced green onions, and a squeeze of fresh lime juice, if desired.
  3. Serve immediately with extra glaze on the side for dipping.

Notes

  • Spice Level: Adjust the number of chipotle peppers to control the heat. One pepper provides a mild kick, while two will be spicier.
  • Make-Ahead: The glaze can be prepared up to 2 days in advance and stored in an airtight container in the refrigerator. Reheat gently before tossing with the wings.
  • Alternative Cooking Method: For extra crispy wings, you can air-fry them at 400°F (200°C) for 20-25 minutes, shaking the basket halfway through.
  • Serving Suggestions: Pair with celery sticks, carrot sticks, and a cooling ranch or blue cheese dip to balance the heat.
