Ingredients
For the Wings:
- 2 lbs (900g) chicken wings, split into flats and drumettes
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
For the Espresso Chipotle Glaze:
- 1/2 cup brewed espresso (or strong coffee)
- 1/4 cup honey
- 2 tbsp adobo sauce (from canned chipotle peppers)
- 1-2 chipotle peppers in adobo, finely chopped (adjust for spice preference)
- 2 tbsp soy sauce
- 2 tbsp apple cider vinegar
- 1 tbsp brown sugar
- 1 tsp garlic, minced
- 1 tsp cornstarch mixed with 1 tbsp water (for thickening)
- 1 tbsp unsalted butter
Optional Garnish:
- Chopped fresh cilantro
- Sliced green onions
- Lime wedges for squeezing
Equipment
- Large mixing bowl
- Baking sheet with a wire rack
- Small saucepan
- Whisk
- Tongs
Instructions
Step 1: Prepare the Wings
- Preheat your oven to 400°F (200°C). Line a baking sheet with a wire rack and lightly grease the rack with cooking spray.
- In a large mixing bowl, toss the chicken wings with olive oil, salt, black pepper, garlic powder, and smoked paprika until evenly coated.
- Arrange the wings in a single layer on the wire rack. Bake for 40-45 minutes, flipping halfway through, until the wings are crispy and golden brown.
Step 2: Make the Espresso Chipotle Glaze
- In a small saucepan over medium heat, combine the brewed espresso, honey, adobo sauce, chopped chipotle peppers, soy sauce, apple cider vinegar, brown sugar, and minced garlic.
- Bring the mixture to a simmer, stirring occasionally, and let it cook for 5-7 minutes to meld the flavors.
- Add the cornstarch-water mixture to the saucepan, stirring constantly until the glaze thickens, about 1-2 minutes.
- Remove from heat and stir in the butter until fully melted and incorporated. Set the glaze aside.
Step 3: Glaze the Wings
- Once the wings are cooked, transfer them to a large clean mixing bowl.
- Pour the espresso chipotle glaze over the wings and toss to coat evenly.
Step 4: Serve
- Transfer the glazed wings to a serving platter.
- Garnish with chopped cilantro, sliced green onions, and a squeeze of fresh lime juice, if desired.
- Serve immediately with extra glaze on the side for dipping.
Notes
- Spice Level: Adjust the number of chipotle peppers to control the heat. One pepper provides a mild kick, while two will be spicier.
- Make-Ahead: The glaze can be prepared up to 2 days in advance and stored in an airtight container in the refrigerator. Reheat gently before tossing with the wings.
- Alternative Cooking Method: For extra crispy wings, you can air-fry them at 400°F (200°C) for 20-25 minutes, shaking the basket halfway through.
- Serving Suggestions: Pair with celery sticks, carrot sticks, and a cooling ranch or blue cheese dip to balance the heat.
