Ingredients (Serves 2)
- 2 packs instant ramen noodles (discard seasoning packets)
- 4 tbsp unsalted butter
- 2 cloves garlic, minced
- Zest and juice of 1 large lemon (about 2 tbsp juice)
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh basil, finely chopped (optional)
- 1/2 tsp cracked black pepper
- 1/4 tsp red pepper flakes (optional, for a slight kick)
- Salt, to taste
- Extra Parmesan and lemon wedges, for serving
Equipment
- Medium pot
- Large skillet
- Tongs or fork
- Microplane or zester
- Measuring cups and spoons
Instructions
- Cook the Ramen Noodles
Bring a medium pot of water to a boil. Add the ramen noodles and cook according to package instructions (typically 2-3 minutes) until al dente. Drain and set aside, reserving 1/4 cup of the cooking water. - Prepare the Sauce
In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned. - Add Lemon and Cream
Stir in the lemon zest and juice, followed by the heavy cream. Let the mixture simmer gently for 1 minute to thicken slightly. - Incorporate Parmesan
Gradually add the grated Parmesan cheese, stirring constantly until it melts into a smooth sauce. If the sauce is too thick, add a splash of the reserved noodle cooking water to reach desired consistency. - Toss with Noodles
Add the cooked ramen noodles to the skillet, tossing gently with tongs to coat evenly in the sauce. Cook for 1-2 minutes to warm through. - Season and Garnish
Stir in the chopped parsley, basil (if using), cracked black pepper, and red pepper flakes (if using). Taste and adjust with salt if needed. - Serve
Divide the noodles between two plates. Garnish with extra Parmesan, a sprinkle of black pepper, and lemon wedges on the side for squeezing. Serve immediately.
Notes
- Make it Quick: Use pre-minced garlic and pre-grated Parmesan to save time.
- Add Protein: Grilled chicken, shrimp, or crispy pancetta pairs well with this dish.
- Storage: Best enjoyed fresh, but leftovers can be refrigerated in an airtight container for up to 2 days. Reheat gently with a splash of cream or water to revive the sauce.
