Ingredients (Serves 2)

  • 2 packs instant ramen noodles (discard seasoning packets)
  • 4 tbsp unsalted butter
  • 2 cloves garlic, minced
  • Zest and juice of 1 large lemon (about 2 tbsp juice)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh basil, finely chopped (optional)
  • 1/2 tsp cracked black pepper
  • 1/4 tsp red pepper flakes (optional, for a slight kick)
  • Salt, to taste
  • Extra Parmesan and lemon wedges, for serving

Equipment

  • Medium pot
  • Large skillet
  • Tongs or fork
  • Microplane or zester
  • Measuring cups and spoons

Instructions

  1. Cook the Ramen Noodles
Bring a medium pot of water to a boil. Add the ramen noodles and cook according to package instructions (typically 2-3 minutes) until al dente. Drain and set aside, reserving 1/4 cup of the cooking water.
  2. Prepare the Sauce
In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Add Lemon and Cream
Stir in the lemon zest and juice, followed by the heavy cream. Let the mixture simmer gently for 1 minute to thicken slightly.
  4. Incorporate Parmesan
Gradually add the grated Parmesan cheese, stirring constantly until it melts into a smooth sauce. If the sauce is too thick, add a splash of the reserved noodle cooking water to reach desired consistency.
  5. Toss with Noodles
Add the cooked ramen noodles to the skillet, tossing gently with tongs to coat evenly in the sauce. Cook for 1-2 minutes to warm through.
  6. Season and Garnish
Stir in the chopped parsley, basil (if using), cracked black pepper, and red pepper flakes (if using). Taste and adjust with salt if needed.
  7. Serve
Divide the noodles between two plates. Garnish with extra Parmesan, a sprinkle of black pepper, and lemon wedges on the side for squeezing. Serve immediately.

Notes

  • Make it Quick: Use pre-minced garlic and pre-grated Parmesan to save time.
  • Add Protein: Grilled chicken, shrimp, or crispy pancetta pairs well with this dish.
  • Storage: Best enjoyed fresh, but leftovers can be refrigerated in an airtight container for up to 2 days. Reheat gently with a splash of cream or water to revive the sauce.
