  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) plain Greek yogurt
  • ½ cup (120ml) whole milk
  • 1 cup (240ml) mango puree (fresh or canned)

For the Mango Lassi Cream Frosting:

  • 1 ½ cups (360ml) heavy whipping cream, chilled
  • 1 cup (240ml) plain Greek yogurt
  • ¾ cup (90g) powdered sugar
  • ¾ cup (180ml) mango puree
  • ½ teaspoon ground cardamom
  • 1 teaspoon vanilla extract

For Garnish (Optional):

  • 1 fresh mango, peeled and thinly sliced
  • ¼ cup (25g) chopped pistachios
  • Edible rose petals or dried mango slices

Equipment

  • Two 8-inch (20cm) round cake pans
  • Parchment paper
  • Mixing bowls
  • Electric mixer or whisk
  • Spatula
  • Cooling racks
  • Cake stand or serving plate

Instructions

Step 1: Prepare the Cake

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cardamom. Set aside.
  3. Cream Butter and Sugar: In a large bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add Wet Ingredients: Beat in the eggs one at a time, followed by the vanilla extract. Add the Greek yogurt and mango puree, mixing until smooth.
  5. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture in three additions, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. Bake: Divide the batter evenly between the prepared pans. Smooth the tops with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 2: Make the Mango Lassi Cream Frosting

  1. Whip the Cream: In a chilled mixing bowl, whip the heavy cream with an electric mixer until soft peaks form.
  2. Add Yogurt and Flavorings: Gently fold in the Greek yogurt, powdered sugar, mango puree, ground cardamom, and vanilla extract. Continue whipping until stiff peaks form. Refrigerate until ready to use.

Step 3: Assemble the Cake

  1. Level the Cakes: If necessary, use a serrated knife to level the tops of the cooled cakes for even stacking.
  2. Frost the First Layer: Place one cake layer on a cake stand or serving plate. Spread a generous layer of mango lassi cream frosting over the top.
  3. Add the Second Layer: Place the second cake layer on top. Apply a thin crumb coat of frosting over the entire cake, then refrigerate for 15 minutes to set.
  4. Final Frosting: Frost the top and sides of the cake with the remaining mango lassi cream, creating smooth or decorative swirls as desired.

Step 4: Garnish and Serve

  1. Decorate: Arrange fresh mango slices, chopped pistachios, and edible rose petals or dried mango slices on top for an elegant touch.
  2. Chill: Refrigerate the cake for at least 30 minutes before serving to allow the flavors to meld.
  3. Serve: Slice and serve chilled for the best texture and flavor.

Tips

  • Mango Puree: For the best flavor, use fresh ripe mangoes (Alphonso or Ataulfo varieties work well). Blend until smooth. If using canned puree, ensure it’s unsweetened.
  • Storage: Store the cake in an airtight container in the refrigerator for up to 3 days. Freeze unfrosted cake layers for up to 1 month.
  • Variations: Add a pinch of saffron to the frosting for an extra layer of flavor or incorporate diced mango pieces between the layers for texture.
