Instructions
- Preheat Oven and Prepare Fries:

- Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
- Cook the Maple Bacon:
- While the fries bake, line a plate with paper towels.
- In a large skillet over medium heat, cook the bacon slices until crispy, about 4–5 minutes per side.
- Remove bacon from the skillet and place on the paper towel-lined plate to drain excess fat.
- Brush both sides of the bacon with maple syrup and sprinkle with cayenne pepper (if using). Return to the skillet for 1 minute per side to caramelize the syrup. Remove and set aside, then roughly chop.
- Prepare the Eggs:
- In the same skillet, fry the eggs to your desired doneness (sunny-side up or over-easy work well for this dish). Season with a pinch of salt and pepper.
- Assemble the Fries:
- Once the fries are done, transfer them to a large serving platter or keep them on the baking sheet.
- Sprinkle shredded cheddar cheese evenly over the hot fries to melt slightly.
- Arrange the fried eggs on top of the fries.
- Scatter the chopped maple bacon over the eggs and cheese.
- Garnish with sliced green onions.
- Serve:
- Add dollops of sour cream on top, if desired, and serve with hot sauce on the side.
