Instructions

  1. Preheat Oven and Prepare Fries:
    • Preheat your oven to 425°F (220°C).

    • In a large bowl, toss the fries with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.

    • Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
  2. Cook the Maple Bacon:
    • While the fries bake, line a plate with paper towels.
    • In a large skillet over medium heat, cook the bacon slices until crispy, about 4–5 minutes per side.
    • Remove bacon from the skillet and place on the paper towel-lined plate to drain excess fat.
    • Brush both sides of the bacon with maple syrup and sprinkle with cayenne pepper (if using). Return to the skillet for 1 minute per side to caramelize the syrup. Remove and set aside, then roughly chop.
  3. Prepare the Eggs:
    • In the same skillet, fry the eggs to your desired doneness (sunny-side up or over-easy work well for this dish). Season with a pinch of salt and pepper.
  4. Assemble the Fries:
    • Once the fries are done, transfer them to a large serving platter or keep them on the baking sheet.
    • Sprinkle shredded cheddar cheese evenly over the hot fries to melt slightly.
    • Arrange the fried eggs on top of the fries.
    • Scatter the chopped maple bacon over the eggs and cheese.
    • Garnish with sliced green onions.
  5. Serve:
    • Add dollops of sour cream on top, if desired, and serve with hot sauce on the side.
