Ingredients

  • 1 cup vanilla ice cream
  • 1/2 cup milk (whole or 2% for creaminess)
  • 1/4 cup pumpkin puree (canned, unsweetened)
  • 2 oz cream cheese, softened
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 2 tbsp graham cracker crumbs (plus extra for garnish)
  • 2 tbsp whipped cream (for topping)
  • 1 tbsp caramel sauce (optional, for drizzle)

Equipment

  • Blender
  • Measuring cups and spoons
  • Glass for serving

Instructions

  1. Prepare Ingredients: Ensure the cream cheese is softened (leave at room temperature for 15–20 minutes or microwave for 10 seconds).
  2. Blend the Shake: In a blender, combine vanilla ice cream, milk, pumpkin puree, cream cheese, pumpkin pie spice, cinnamon, vanilla extract, and graham cracker crumbs. Blend on high speed until smooth and creamy, about 30–45 seconds.
  3. Check Consistency: If the shake is too thick, add an additional 1–2 tablespoons of milk and blend again. If too thin, add a small scoop of ice cream.
  4. Serve: Pour the shake into a chilled glass. Top with whipped cream, a sprinkle of graham cracker crumbs, and a drizzle of caramel sauce, if desired.
  5. Enjoy Immediately: Serve with a straw or spoon for the ultimate indulgent experience.

Notes

  • For a lighter version, use low-fat milk or a dairy-free alternative like almond milk, and substitute frozen yogurt for ice cream.
  • Adjust the pumpkin pie spice to taste for a stronger or milder flavor.
  • Store-bought or homemade pumpkin pie spice works well. To make your own, mix 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger, and 1/8 tsp cloves.
