Ingredients
- 1 cup vanilla ice cream
- 1/2 cup milk (whole or 2% for creaminess)
- 1/4 cup pumpkin puree (canned, unsweetened)
- 2 oz cream cheese, softened
- 1/4 tsp pumpkin pie spice
- 1/4 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 2 tbsp graham cracker crumbs (plus extra for garnish)
- 2 tbsp whipped cream (for topping)
- 1 tbsp caramel sauce (optional, for drizzle)
Equipment
- Blender
- Measuring cups and spoons
- Glass for serving
Instructions
- Prepare Ingredients: Ensure the cream cheese is softened (leave at room temperature for 15–20 minutes or microwave for 10 seconds).
- Blend the Shake: In a blender, combine vanilla ice cream, milk, pumpkin puree, cream cheese, pumpkin pie spice, cinnamon, vanilla extract, and graham cracker crumbs. Blend on high speed until smooth and creamy, about 30–45 seconds.
- Check Consistency: If the shake is too thick, add an additional 1–2 tablespoons of milk and blend again. If too thin, add a small scoop of ice cream.
- Serve: Pour the shake into a chilled glass. Top with whipped cream, a sprinkle of graham cracker crumbs, and a drizzle of caramel sauce, if desired.
- Enjoy Immediately: Serve with a straw or spoon for the ultimate indulgent experience.
Notes
- For a lighter version, use low-fat milk or a dairy-free alternative like almond milk, and substitute frozen yogurt for ice cream.
- Adjust the pumpkin pie spice to taste for a stronger or milder flavor.
- Store-bought or homemade pumpkin pie spice works well. To make your own, mix 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger, and 1/8 tsp cloves.
