Ingredients (Serves 4)

For the Beef Patties:

  • 1 lb (450g) ground beef (80/20 for optimal flavor and juiciness)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

For the Burger Sauce:

  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp pickle relish
  • 1 tsp white vinegar
  • 1/2 tsp paprika
  • Pinch of salt and pepper

For the Wraps:

  • 4 large flour tortillas (10-inch)
  • 4 slices American cheese
  • 1 cup shredded iceberg lettuce
  • 1 medium tomato, thinly sliced
  • 1/2 small red onion, thinly sliced (optional)
  • 1 tbsp vegetable oil or butter (for grilling wraps)

Equipment:

  • Large skillet or griddle
  • Spatula (preferably wide and sturdy)
  • Mixing bowl
  • Parchment paper or foil (optional, for wrapping)

Instructions

Step 1: Prepare the Burger Sauce

  1. In a small mixing bowl, combine mayonnaise, ketchup, mustard, pickle relish, white vinegar, paprika, salt, and pepper.
  2. Stir until smooth and well-combined. Taste and adjust seasoning if needed.
  3. Cover and refrigerate until ready to use.

Step 2: Form the Beef Patties

  1. Divide the ground beef into 8 equal portions (about 2 oz each) and loosely form into balls. Don’t overwork the meat to keep the patties tender.
  2. Season each ball lightly with salt, pepper, garlic powder, and onion powder.

Step 3: Cook the Smashburgers

  1. Heat a large skillet or griddle over medium-high heat until very hot (about 2-3 minutes).
  2. Add a small amount of oil to the skillet to prevent sticking.
  3. Place 2-3 beef balls on the skillet, leaving space between them. Use a spatula to press each ball down firmly into a thin patty (about 1/4-inch thick). For extra crispiness, press with a flat tool like a burger press or the bottom of a heavy pan.
  4. Cook for 2-3 minutes until the edges are crispy and browned. Flip the patties and place a slice of American cheese on half of them (one patty per wrap will have cheese).
  5. Cook for another 1-2 minutes until the cheese is melted and the patties are cooked through. Remove from skillet and set aside. Repeat with remaining beef balls.

Step 4: Assemble the Wraps

  1. Lay a flour tortilla flat on a clean surface.
  2. Spread 1-2 tablespoons of burger sauce in the center of the tortilla.
  3. Add a small handful of shredded lettuce, 2-3 tomato slices, and a few red onion slices (if using).
  4. Place two patties (one with cheese, one without) on top of the vegetables.
  5. Fold the bottom of the tortilla up, then fold in the sides and roll tightly to close.

Step 5: Grill the Wraps

  1. Heat a clean skillet or griddle over medium heat and lightly brush with vegetable oil or melted butter.
  2. Place the wraps seam-side down on the skillet. Cook for 1-2 minutes per side until golden brown and slightly crispy.
  3. Remove from heat and let cool for 1 minute.

Step 6: Serve

  1. Slice the wraps in half diagonally for easier eating, if desired.
  2. Serve immediately with extra burger sauce on the side for dipping, and optional sides like fries or pickles.

Tips

  • Make it Quick: Prepare the burger sauce and slice vegetables in advance to streamline assembly.
  • Customize: Add bacon, pickles, or jalapeños for extra flavor.
  • Storage: Wraps are best enjoyed fresh, but you can refrigerate leftovers for up to 1 day. Reheat in a skillet to maintain crispiness.
