Ingredients (Serves 4)
For the Beef Patties:
- 1 lb (450g) ground beef (80/20 for optimal flavor and juiciness)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
For the Burger Sauce:
- 1/4 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp pickle relish
- 1 tsp white vinegar
- 1/2 tsp paprika
- Pinch of salt and pepper
For the Wraps:
- 4 large flour tortillas (10-inch)
- 4 slices American cheese
- 1 cup shredded iceberg lettuce
- 1 medium tomato, thinly sliced
- 1/2 small red onion, thinly sliced (optional)
- 1 tbsp vegetable oil or butter (for grilling wraps)
Equipment:
- Large skillet or griddle
- Spatula (preferably wide and sturdy)
- Mixing bowl
- Parchment paper or foil (optional, for wrapping)
Instructions
Step 1: Prepare the Burger Sauce
- In a small mixing bowl, combine mayonnaise, ketchup, mustard, pickle relish, white vinegar, paprika, salt, and pepper.
- Stir until smooth and well-combined. Taste and adjust seasoning if needed.
- Cover and refrigerate until ready to use.
Step 2: Form the Beef Patties
- Divide the ground beef into 8 equal portions (about 2 oz each) and loosely form into balls. Don’t overwork the meat to keep the patties tender.
- Season each ball lightly with salt, pepper, garlic powder, and onion powder.
Step 3: Cook the Smashburgers
- Heat a large skillet or griddle over medium-high heat until very hot (about 2-3 minutes).
- Add a small amount of oil to the skillet to prevent sticking.
- Place 2-3 beef balls on the skillet, leaving space between them. Use a spatula to press each ball down firmly into a thin patty (about 1/4-inch thick). For extra crispiness, press with a flat tool like a burger press or the bottom of a heavy pan.
- Cook for 2-3 minutes until the edges are crispy and browned. Flip the patties and place a slice of American cheese on half of them (one patty per wrap will have cheese).
- Cook for another 1-2 minutes until the cheese is melted and the patties are cooked through. Remove from skillet and set aside. Repeat with remaining beef balls.
Step 4: Assemble the Wraps
- Lay a flour tortilla flat on a clean surface.
- Spread 1-2 tablespoons of burger sauce in the center of the tortilla.
- Add a small handful of shredded lettuce, 2-3 tomato slices, and a few red onion slices (if using).
- Place two patties (one with cheese, one without) on top of the vegetables.
- Fold the bottom of the tortilla up, then fold in the sides and roll tightly to close.
Step 5: Grill the Wraps
- Heat a clean skillet or griddle over medium heat and lightly brush with vegetable oil or melted butter.
- Place the wraps seam-side down on the skillet. Cook for 1-2 minutes per side until golden brown and slightly crispy.
- Remove from heat and let cool for 1 minute.
Step 6: Serve
- Slice the wraps in half diagonally for easier eating, if desired.
- Serve immediately with extra burger sauce on the side for dipping, and optional sides like fries or pickles.
Tips
- Make it Quick: Prepare the burger sauce and slice vegetables in advance to streamline assembly.
- Customize: Add bacon, pickles, or jalapeños for extra flavor.
- Storage: Wraps are best enjoyed fresh, but you can refrigerate leftovers for up to 1 day. Reheat in a skillet to maintain crispiness.
