  • 1 tsp smoked paprika
  • 2 sprigs fresh thyme
  • 2 tbsp unsalted butter
  • 2 cloves garlic, smashed

For the Truffle Fries:

  • 2 large russet potatoes (about 1.5 lbs), cut into 1/4-inch fries
  • 2 tbsp truffle oil
  • 1 tsp truffle salt (or kosher salt)
  • 1/4 cup grated parmesan cheese
  • 2 tbsp fresh parsley, finely chopped
  • Vegetable oil, for frying

For the Garlic Parmesan Dip:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/4 tsp black pepper
  • Pinch of kosher salt

Equipment

  • Cast iron skillet or heavy-bottomed pan
  • Deep fryer or large pot for frying
  • Baking sheet with wire rack
  • Mixing bowls
  • Tongs
  • Paper towels

Instructions

Prepare the Truffle Fries:

  1. Soak the Potatoes: Place cut potatoes in a bowl of cold water for 30 minutes to remove excess starch. Drain and pat dry thoroughly with paper towels.
  2. Fry the Potatoes: Heat vegetable oil in a deep fryer or large pot to 325°F (165°C). Fry potatoes in batches for 4-5 minutes until soft but not browned. Remove and drain on a wire rack over a baking sheet.
  3. Second Fry: Increase oil temperature to 375°F (190°C). Fry potatoes again for 2-3 minutes until golden and crispy. Drain on the wire rack.
  4. Season the Fries: Toss hot fries in a bowl with truffle oil, truffle salt, parmesan, and parsley. Set aside and keep warm.

Cook the Flat Iron Steak:

  1. Season the Steak: Pat the steak dry with paper towels. Rub with olive oil, then season both sides with salt, pepper, garlic powder, and smoked paprika.
  2. Sear the Steak: Heat a cast iron skillet over medium-high heat until smoking hot. Add the steak and sear for 3-4 minutes per side for medium-rare (135°F/57°C internal temperature).
  3. Baste with Butter: Add butter, thyme, and smashed garlic to the skillet. Tilt the pan and spoon the melted butter and aromatics over the steak for 1 minute.
  4. Rest the Steak: Remove steak to a cutting board and let rest for 5 minutes before slicing against the grain.

Make the Garlic Parmesan Dip:

  1. Combine Ingredients: In a small bowl, whisk together mayonnaise, sour cream, parmesan, minced garlic, lemon juice, Dijon mustard, black pepper, and salt until smooth.
  2. Chill: Cover and refrigerate for at least 15 minutes to let flavors meld.

Serve:

  1. Plate the Dish: Arrange sliced steak and truffle fries on plates. Serve with a side of garlic parmesan dip.
  2. Optional Garnish: Sprinkle extra parmesan or parsley over the fries for added flair.

Tips

  • Steak Doneness: Adjust cooking time for preferred doneness (e.g., 2-3 minutes per side for rare, 5-6 minutes per side for medium).
  • Truffle Oil: Use sparingly as it’s potent. Adjust to taste.
  • Make Ahead: The dip can be prepared up to 2 days in advance and stored in the fridge.
