  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp truffle oil (white or black, depending on preference)

  • 1/4 cup sour cream
  • 1/4 cup buttermilk
  • 1 tsp dried dill
  • 1 tsp dried parsley
  • 1 tsp dried chives
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp lemon juice

Equipment:

  • Large pot
  • Baking sheet
  • Parchment paper
  • Fork or potato masher
  • Mixing bowl
  • Whisk

Instructions

Step 1: Prepare the Potatoes

  1. Preheat your oven to 425°F (220°C).
  2. Wash the baby potatoes thoroughly under cold water.
  3. Place potatoes in a large pot and cover with cold water. Add a pinch of salt.
  4. Bring to a boil over medium-high heat and cook for 15-20 minutes, or until fork-tender but not falling apart.
  5. Drain the potatoes and let them cool slightly for 5 minutes.

Step 2: Smash and Season

  1. Line a baking sheet with parchment paper and drizzle with 1 tbsp olive oil.
  2. Place the boiled potatoes on the baking sheet, leaving space between each.
  3. Use a fork or potato masher to gently smash each potato until it’s about 1/2 inch thick.
  4. Drizzle the remaining 2 tbsp olive oil over the smashed potatoes.
  5. Sprinkle garlic powder, smoked paprika, kosher salt, and black pepper evenly over the potatoes.

Step 3: Bake the Fries

  1. Bake in the preheated oven for 20-25 minutes, or until the edges are golden and crispy.
  2. Flip the potatoes halfway through cooking to ensure even crispiness.
  3. Remove from the oven and immediately drizzle with truffle oil. Toss gently to coat.
  4. Sprinkle with fresh parsley and Parmesan cheese (if using).

Step 4: Make the Ranch Dipping Sauce

  1. In a mixing bowl, whisk together mayonnaise, sour cream, and buttermilk until smooth.
  2. Add dried dill, parsley, chives, garlic powder, onion powder, salt, pepper, and lemon juice.
  3. Whisk until fully combined. Taste and adjust seasoning if needed.
  4. Cover and refrigerate for at least 15 minutes to let the flavors meld.

Step 5: Serve

  1. Transfer the smash fries to a serving platter.
  2. Serve hot with the ranch dipping sauce on the side.
