Ingredients
For the Smash Fries:
- 1.5 lbs (680g) baby potatoes (Yukon Gold or red potatoes work well)
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp truffle oil (white or black, depending on preference)
- 2 tbsp fresh parsley, finely chopped (for garnish)
- 1/4 cup grated Parmesan cheese (optional, for extra flavor)
For the Ranch Dipping Sauce:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup buttermilk
- 1 tsp dried dill
- 1 tsp dried parsley
- 1 tsp dried chives
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 tsp lemon juice

Instructions
Step 1: Prepare the Potatoes
- Preheat your oven to 425°F (220°C).
- Wash the baby potatoes thoroughly under cold water.
- Place potatoes in a large pot and cover with cold water. Add a pinch of salt.
- Bring to a boil over medium-high heat and cook for 15-20 minutes, or until fork-tender but not falling apart.
- Drain the potatoes and let them cool slightly for 5 minutes.
Step 2: Smash and Season
- Line a baking sheet with parchment paper and drizzle with 1 tbsp olive oil.
- Place the boiled potatoes on the baking sheet, leaving space between each.
- Use a fork or potato masher to gently smash each potato until it’s about 1/2 inch thick.
- Drizzle the remaining 2 tbsp olive oil over the smashed potatoes.
- Sprinkle garlic powder, smoked paprika, kosher salt, and black pepper evenly over the potatoes.
Step 3: Bake the Fries
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden and crispy.
- Flip the potatoes halfway through cooking to ensure even crispiness.
- Remove from the oven and immediately drizzle with truffle oil. Toss gently to coat.
- Sprinkle with fresh parsley and Parmesan cheese (if using).
Step 4: Make the Ranch Dipping Sauce
- In a mixing bowl, whisk together mayonnaise, sour cream, and buttermilk until smooth.
- Add dried dill, parsley, chives, garlic powder, onion powder, salt, pepper, and lemon juice.
- Whisk until fully combined. Taste and adjust seasoning if needed.
- Cover and refrigerate for at least 15 minutes to let the flavors meld.
Step 5: Serve
- Transfer the smash fries to a serving platter.
- Serve hot with the ranch dipping sauce on the side.
