Ingredients

For the Fries:

  • 2 lbs russet potatoes (about 4 medium potatoes), cut into 1/4-inch thick fries
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • Vegetable oil (for frying, if deep-frying)

For the Zaatar Garlic Seasoning:

  • 2 tbsp zaatar spice blend
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika (optional, for extra flavor)
  • 1/4 tsp cayenne pepper (optional, for a slight kick)

For the Topping:

  • 1 cup crumbled feta cheese
  • 1/4 cup fresh parsley, finely chopped
  • 1 tbsp lemon zest (optional, for brightness)
  • 2 tbsp Greek yogurt or labneh (optional, for drizzling)

Equipment

  • Large mixing bowl
  • Baking sheet (if baking) or deep fryer/pot (if frying)
  • Tongs or slotted spoon
  • Small saucepan or skillet
  • Paper towels (if frying)

Instructions

Step 1: Prepare the Potatoes

  1. Wash and Cut: Rinse the potatoes thoroughly. Peel if desired, or leave the skin on for extra texture. Cut into 1/4-inch thick fries.
  2. Soak: Place the cut fries in a large bowl of cold water. Soak for at least 30 minutes (or up to 2 hours) to remove excess starch. This helps achieve crispier fries.
  3. Dry: Drain the fries and pat them completely dry with paper towels.

Step 2: Cook the Fries

Option 1: Baking (for a lighter version)

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Season: In a large bowl, toss the dried fries with 3 tbsp olive oil, kosher salt, and black pepper.
  3. Bake: Spread the fries in a single layer on a baking sheet lined with parchment paper. Ensure they don’t overlap for maximum crispiness. Bake for 25–30 minutes, flipping halfway through, until golden and crispy.

Option 2: Deep Frying (for classic crispy fries)

  1. Heat Oil: In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).
  2. Fry in Batches: Fry the dried potatoes in small batches for 4–5 minutes or until golden brown and crispy. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.

Step 3: Prepare the Zaatar Garlic Seasoning

  1. Heat Oil: In a small saucepan or skillet, heat 2 tbsp olive oil over medium heat.
  2. Sauté Garlic: Add the minced garlic and cook for 1–2 minutes until fragrant but not browned.
  3. Add Spices: Stir in the zaatar spice blend, smoked paprika, and cayenne pepper (if using). Cook for another 30 seconds, then remove from heat.

Step 4: Assemble the Fries

  1. Toss Fries: Place the hot fries in a large bowl. Drizzle the zaatar garlic oil mixture over the fries and toss to coat evenly.
  2. Add Toppings: Transfer the seasoned fries to a serving platter. Sprinkle crumbled feta cheese, chopped parsley, and lemon zest (if using) over the top.
  3. Optional Drizzle: For extra creaminess, drizzle Greek yogurt or labneh over the fries.

Step 5: Serve

  • Serve immediately while the fries are hot and crispy. Pair with a side of tzatziki, hummus, or a simple lemon wedge for squeezing.

Tips

  • Zaatar Variations: Zaatar blends vary by region. If your blend is salt-heavy, adjust the kosher salt in the fries accordingly.
  • Make Ahead: You can cut and soak the potatoes a day in advance. Store them in water in the fridge to prevent browning.
  • Storage: These fries are best enjoyed fresh. If you have leftovers, store in an airtight container in the fridge for up to 2 days. Reheat in an oven at 400°F (200°C) to restore crispiness.
