Ingredients
For the Cake:

- 8 oz (225g) cream cheese, softened
- ½ cup (115g) unsalted butter, softened
- 4 cups (480g) powdered sugar
- ¼ cup (60ml) cherry cola
- 1 tsp vanilla extract
- Pinch of salt
- Optional: Extra maraschino cherries for garnish

Instructions
Cake:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line with parchment paper.
- Mix Dry Ingredients: In a large bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
- Mix Wet Ingredients: In another bowl, whisk together vegetable oil, eggs, cherry cola, vinegar, vanilla extract, and red food coloring until smooth.
- Combine: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the chopped maraschino cherries.
- Bake: Divide the batter evenly between the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Let the cakes cool in the pans for 10 minutes, then transfer to cooling racks to cool completely.
Frosting:
- Beat Cream Cheese and Butter: In a large bowl, use an electric mixer to beat the cream cheese and butter until smooth and creamy.
- Add Sugar: Gradually add powdered sugar, 1 cup at a time, beating well after each addition.
- Add Liquid: Add cherry cola, vanilla extract, and a pinch of salt. Beat until light and fluffy, about 2–3 minutes.
Assembly:
- Level Cakes: If needed, trim the tops of the cakes to make them flat.
- Frost: Place one cake layer on a serving plate. Spread a layer of frosting on top. Add the second cake layer and frost the top and sides of the cake.
- Decorate: Garnish with maraschino cherries if desired.
- Chill: Refrigerate the cake for at least 30 minutes to set the frosting before serving.
Tips:
- Ensure the cherry cola is flat to avoid excess bubbles in the batter.
- Drain maraschino cherries well to prevent adding extra liquid to the cake.
