Carolina Reaper Mash
Heat: 10/10 · Style: Extreme single-pepper mash · Vinegar level: Low · Best for: A few drops in chili, wings, or a dare
The Carolina Reaper mash is what happens when you blend the world’s record-setting pepper with just enough acid to keep it shelf-stable and let the fruit-forward sweetness underneath the heat come through. This is a single-note sauce in the best sense — you taste pepper first, then a slow, lingering burn that builds for two to three minutes.
Flavor profile
Tropical, slightly raisin-y, with cherry and citrus notes if you let the peppers ripen fully. Fermentation is optional but rounds the harsher edges. Always wear gloves and run a window fan when blending.
Suggested build
- 120 g ripe Carolina Reapers, stemmed
- 2 cloves garlic
- 1 tsp sea salt
- 120 ml distilled white vinegar (5%)
- 1 tbsp lime juice
Blend smooth, simmer 5 minutes, strain if you want a cleaner pour. Target pH ≤ 4.0 for shelf stability. Refrigerate if untested.
